Unset fields via workflows

We can currently unset fields via a bulk update from within the Data Explorer, but there are instances where we might need to unset a value via workflow. This isn't so vital for text fields as we can simply set the value to 'N/A' (although this isn't particularly clean), but with Date fields we're stuck with them until a new relevant date can be inserted.
